Poly is a modern Australian restaurant and wine bar on the ground floor of the Paramount House building in Surry Hills. Its kitchen is centred on fire-led cooking, with a menu created by chef Mat Lindsay. The venue is entered from the corner of Goulburn Lane and Commonwealth Street, placing it in a convenient part of inner Sydney for an evening meal or drinks.
Wine is a major part of the offering. Sommelier Julien Dromgool has put together a list focused on passionate winemakers working with organic and biodynamic principles. Poly is fully licensed, with wine, beer and cocktails available alongside its food menus. There is also an aperitivo period, called “apolytivo”, with drinks and snacks at a more approachable price point from Monday to Thursday between 5pm and 6pm, and on Friday from 4pm to 6pm.
The format is flexible: bookings are recommended, but same-day walk-ins are welcome when space allows. Poly offers à la carte dining, banquet and group options, a Friday lunch menu and drinks, making it suitable for a planned dinner, a group gathering or a casual drink and snack. It operates Monday to Thursday from 5pm until late, Friday from midday until late, and Saturday from 5pm until late. A 10% surcharge applies on Sundays and public holidays, and BYO is not available.
