That emphasis gives the bar a more considered feel than a standard drinks stop, particularly for anyone who enjoys browsing a spirits list or trying something unfamiliar.
There is more to the offering than whisky. Pretzels are available alongside cocktails, beer and wine, with the bar leaving the choice of drink and style of visit to its guests. The Baxter Inn opened in the Sydney CBD in 2010 and is part of the Swillhouse group, founded by bartender Anton Forte and waiter Jason Scott. The group grew from their interest in Sydney nightlife and their aim of creating distinctive city venues. Baxter Inn’s walk-in-only policy applies seven days a week, with no bookings taken. It trades from 4pm to 3am Sunday to Wednesday and from 3pm to 3am Thursday to Saturday, so check the timing that suits before heading in. With its late hours, whisky collection and blues-led atmosphere, it is best suited to adults looking for drinks and conversation rather than a family meal.
