Slow Lane Brewing

Slow Lane Brewing is a small, husband-and-wife-owned brewery whose taproom and kitchen are located at 30 Byrnes St, Botany. The brewery focuses on frequently released beers across a broad range of styles, drawing on traditional European brewing while giving those styles modern interpretations. Its onsite tasting room opened in 2021, and the taproom also hosts live music on selected weekend sessions.

The beer list ranges from lighter, lower-alcohol releases to robust and barrel-aged beers. Belgian-inspired options include Twofold, a 7.5% Belgian Dubbel, and Gilded Cane, a 9.5% rum barrel-aged Belgian Tripel. Frozen Sea is an 8.5% Baltic Porter, while Midnight Cargo is a 10% rum barrel-aged Belgian Stout. There are also lagers, pale ales, farmhouse ales, IPAs, sours and darker beers, making the range suitable for drinkers who enjoy comparing different brewing traditions rather than sticking to one familiar style.

Slow Lane’s point of difference is its slower, more hands-on approach. The brewery uses traditional methods for slow-fermented beers, naturally carbonates through can and keg conditioning, and makes some beers with mixed cultures of wild yeast and bacteria. Selected releases are aged in oak barrels. This emphasis on fermentation, conditioning and old-world styles gives the taproom a clear focus: it is a place to explore how yeast, time and different brewing methods shape a beer, rather than simply choosing from a standard lineup.

The brewery grew from Alex and Yvonne’s shared interest in craft beer. After discovering American breweries producing their own versions of classic European styles, Alex began homebrewing before working in commercial breweries in California. The couple returned to Sydney to establish Slow Lane Brewing, releasing their first beers in 2020. With its rotating releases, varied beer styles and weekend live music, the Botany taproom should appeal most to curious beer drinkers, dedicated craft-beer followers and groups looking for a tasting-focused brewery visit.
